Nigerian Okro Soup recipe

I had okro or okra depending on tribal pronunciation last night for dinner served with soft semolina. I enjoyed it and realise I need to blog about .


Ingredients
2 cups chopped or grated okro
1 1/2 cups of water
Boiled beef, fish, roasted fish, smoked cat fish, shrimps or whatever suits you
Grounded crayfish (optional)
1 tablespoon locust beans
2 stock cubes
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons palm oil (optional)
1/2 teaspoon potash (optional)

Method
Bring water to simmer, if using potash add and leave to melt add the okro and please do not cover.
Leave for 10 minutes and add the beef or fish or a combination of both.
Add the palm oil, salt, black pepper, locust beans, and stock cubes, and leave it to cook for another 10-15 minutes.

Your okro is ready to be served with any swallow of your choice could be eba, semo, pounded yam or apu/fufu.
