How to make the Nigerian Moi Moi


Ingredients

  • 3 cigar cups or 750g of Beans (Brown/Black eyed) to be washed and peeled until it looks like what in the bowl below
  • 5 tablespoons ground crayfish (optional) could be replaced with hard boiled eggs, boiled fish, diced beef, shrimps or anything that picks your fanc
  • 4 big stock cubes
  • 1 habanero pepper
  • 2 teaspoons ground nutmeg
  • 3 Red ball "tatashe" peppers 
  • 2 big onions
  • 20cl vegetable oil
  • 2 litres of cool or warm water
  • Salt (to taste)


Method
Grind the already washed beans, onions, Red ball pepper and habanero until it forms a smooth paste.
Mix thoroughly my with a mixing stick or a blender until light and fluffy.
Add the seasoning, salt, groundnut oil and the crayfish, water, mixing thoroughly after each addition.
Scoop paste into baking cups or pans, small plastic bags, or leaves like displayed above and cook on medium heat until well cooked.
Serve with pap, custard, bread, eko.
