How to prepare honey glazed Salmon

  1. Heat 1/4 teaspoon olive oil in a small skillet over medium-high heat. Saute garlic in hot oil until just beginning to brown.
  2. Mix sauteed garlic, soy sauce, lemon juice, honey, 1/2 teaspoon olive oil, brown sugar, sea salt, black pepper, and red pepper flakes together in a bowl; pour into a large resealable plastic bag. Add salmon fillets, turning to coat with the marinade, squeeze bag to remove excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  3. Remove salmon from the marinade and shake to remove excess liquid. Reserve 3 tablespoons marinade and discard remainder.
  4. Heat 1 tablespoon olive oil in a large skillet over medium heat. Arrange salmon fillets in the hot skillet, pour reserved marinade over the salmon, and place a lid on the skillet; cook until salmon is browned on each side and flakes easily with a fork, occasionally spooning liquid from the pan over the fillets, 2 to 3 minutes per side. Garnish salmon with additional sea salt and black pepper.
  5. Serve with fresh oranges. 

How to make Coconut Rice

Ingredients

  • 3 cigar cups | 750g long grain parboiled rice (par boil)
  • 500mls Tomato Stew
  • 600 mls Coconut Milk
  • Chicken (whole chicken or drumsticks)
  • Chilli pepper (to taste)
  • Salt (to taste)
  • 1 medium onions
  • 3 stock cubes
  • 1 tablespoon of thyme (optional)

Cooking Directions

  1. Pour the chicken stock, coconut milk and the tomato stew into the selected pot. Set on the stove to boil. Add the drained parboiled rice, salt and pepper to taste. If necessary, top up with water to bring the water level to the same level as the rice. This is to ensure that all the water dries up by the time the rice is cooked.
  2. Cover the pot and leave to cook on medium heat. This way the rice does not burn before the water dries up.

How to prepare the Nigerian Egusi Soup



INGREDIENTS

  • 200 g of Egusi seed,
  • 400 g of beef,
  • 50 g of cooked and boned stock fish pieces,
  • 3 Tbsp. (45ml) of ground dried crayfish,
  • 1 small bunch of Ugwu or bitter leaves or any type of desired leaves and could also be omitted
  • 50 ml of palm oil,
  • 2  Stock Cubes,
  • 1 small onions,
  • 4 large fresh tomatoes,
  • 1 tsp (5ml) ground chilli powder.

PREPARATION METHOD

  • Cut the beef into small cubes, season with one chopped onion and one Knorr Stock Cube. Add half a cup of water and boil for about 10 minutes or until tender. Set aside.
  • Mix the ground egusi in half a cup of water. Set aside. Blend the tomatoes, the second onion and the chilli. Set aside.
  • Heat the palm oil in another pot and add the Egusi mixture. Stir well and allow it to fry for a moment. Add the blend and stir well. Then Add the ground crayfish, second Knorr cube and stock fish.
  • Add 2 cups of water and allow to cook for five minutes. Add the boiled meat and stir. Turn the heat down and simmer for a further two minutes.
  • Wash and finely slice the Ugwu leaves. Add to the simmering soup and stir. Continue to simmer for a further five minutes to allow the vegetables to soften. Serve with cassava fufu or garri.   This recipe is for the fried egusi, watch out for a post on the non fried egusi

How to make the Nigerian Moi Moi


Ingredients

  • 3 cigar cups or 750g of Beans (Brown/Black eyed) to be washed and peeled until it looks like what in the bowl below
  • 5 tablespoons ground crayfish (optional) could be replaced with hard boiled eggs, boiled fish, diced beef, shrimps or anything that picks your fanc
  • 4 big stock cubes
  • 1 habanero pepper
  • 2 teaspoons ground nutmeg
  • 3 Red ball "tatashe" peppers 
  • 2 big onions
  • 20cl vegetable oil
  • 2 litres of cool or warm water
  • Salt (to taste)


Method
Grind the already washed beans, onions, Red ball pepper and habanero until it forms a smooth paste.
Mix thoroughly my with a mixing stick or a blender until light and fluffy.
Add the seasoning, salt, groundnut oil and the crayfish, water, mixing thoroughly after each addition.
Scoop paste into baking cups or pans, small plastic bags, or leaves like displayed above and cook on medium heat until well cooked.
Serve with pap, custard, bread, eko.

How to make the Nigerian Catfish Pepper Soup

Cooking Directions

  1. Place the pieces of fish in a pot and pour water to just cover the fish, add the stock cubes and bring to the boil.
  2. Once it starts to boil add the ground ehu, onions, habanero pepper and scent leaves and continue cooking.
  3. Once the catfish is done, add salt to taste and leave to simmer for about 5 minutes and it's ready!

How to make Pound Cake


One of the students in the baking school "Beckys World Events School" recently asked that she would love to learn the Pound Cake, so I decide to teach her and also post the recipe.



Ingredients

1/2 pound (2 sticks) butter, plus more for pan
1/2 cup vegetable shortening
3 cups sugar
5 eggs
3 cups all-purpose flour, plus more for pan
1/2 teaspoon fine salt
1/2 teaspoon baking powder
1 cup milk
1 teaspoon vanilla extract



Directions

Preheat oven to 350 degrees F.

With a mixer, cream butter and shortening together.
Add sugar, a little at a time. Add eggs, 1 at a time, beating after each addition.

Stir dry ingredients together in a bowl and add to mixer alternately with milk, starting with the flour and ending with the flour.
Mix in vanilla. Pour into a greased and floured tube pan and bake for 1 to 1 1/2 hours, until a toothpick inserted in the center of the cake comes out clean.

Tasty cake for breakfast with tea, or eating during business meetings.

How to make Marble Cake




Ingredients

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt ( for unsalted butter )
1 cup white sugar
1/2 cup butter, softened
2 eggs
1 teaspoon vanilla extract
1 cup milk
2 tablespoons unsweetened cocoa powder

Directions

Prep 20 m

Cook 35 m

Ready In 55 m

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch round pan.

Place flour, baking powder, salt, sugar, butter or margarine, eggs, vanilla, and milk into mixing bowl. Beat slowly to moisten, then beat with an electric mixer at medium speed for about 2 minutes until smooth.

 Reserve 3/4 cup batter; pour the remainder into pan.

Stir cocoa into the 3/4 cup reserved batter. Drop by spoonfuls over top of white batter. Using a knife, swirl the cocoa batter into the white batter to incorporate it in a marble effect.
Bake in preheated oven for 30 to 35 minutes, until an inserted wooden pick comes out clean.


A lovely combo of vanilla and chocolate, different cake flavour of your choice can be combined to achieving the marble like effect. Enjoy

Nigerian Okro Soup recipe

I had okro or okra depending on tribal pronunciation last night for dinner served with soft semolina. I enjoyed it and realise I need to blog about .


Ingredients
2 cups chopped or grated okro
1 1/2 cups of water
Boiled beef, fish, roasted fish, smoked cat fish, shrimps or whatever suits you
Grounded crayfish (optional)
1 tablespoon locust beans
2 stock cubes
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons palm oil (optional)
1/2 teaspoon potash (optional)

Method
Bring water to simmer, if using potash add and leave to melt add the okro and please do not cover.
Leave for 10 minutes and add the beef or fish or a combination of both.
Add the palm oil, salt, black pepper, locust beans, and stock cubes, and leave it to cook for another 10-15 minutes.

Your okro is ready to be served with any swallow of your choice could be eba, semo, pounded yam or apu/fufu.
